
Have you ever wanted to throw some food into one pan and let it cook itself? Well, I found a recipe that does just that. One Pot Salmon Coconut Curry Pasta is one of my favorite quick fixes for dinner and it’s the best way to warm up on a chilly day. The curry gives the dish a little kick while the coconut mellows out the spice. I adapted this recipe from Culinary Tribune and it serves 4 people so it’s perfect for a family dinner. Ingredients:
- 12 oz. linguine
- 3 cups water
- 1 can coconut milk
- 2 vegetable stock cubes
- 2 cloves garlic, thinly sliced
- 1 onion sliced
- 1 red pepper sliced
- 15 grape tomatoes cut in half
- 0.8 lb salmon
- 2 tbl. Indian curry paste
- 1 tbl. canola oil
- 1 bay leaf
- parsley, to taste
- cilantro, to taste
- 1 tbl. sugar
- salt
- pepper
Directions:
Place all the ingredients in a pot. Cover the pot and bring to a boil. Reduce to a low simmer and keep covered. Cook for about 17 minutes, stirring a few times, until the pasta is al dente. Season with salt and pepper.
