“Drunken” Mussels

When it comes to cooking, tequila is always a good idea. Try making these “drunken” tequila lime mussels for an added kick to your dinner.

  • 1 tsp. canola oil
  • 1/2 red bell pepper, diced
  • 1/2 onion, diced
  • 1/2 cup tequila
  • 1/4 cup water
  • 1 lime, juiced
  • black pepper, to taste
  • 1 jalapeño pepper, diced
  • 2 lbs fresh mussels, scrubbed and debearded
  • 1/2 cup fresh cilantro, chopped

In a large pot, heat oil over medium heat. Add red pepper and onion, stirring frequently, for about 5 minutes.

Stir in tequila, water, lime juice, pepper and jalapeños. Bring to a boil and add the mussels. Sprinkle cilantro over the dish and cover with a tight fitting lid. Allow to steam for 3 to 4 minutes or until all the mussels have opened. Discard any mussels that don’t open and serve immediately.
