Store-bought caramel sauce does not hold a candle to the homemade stuff. If you find yourself in need of some caramel, try using the recipe below.
- 1 cup sugar
- ¼ cup water
- ¾ cup heavy cream
- 3 tablespoons unsalted butter
- ¼ teaspoon salt
1. In a saucepan, heat sugar and water over medium-low heat and stir the until sugar has dissolved. Then increase to high heat. Stop stirring and using the handle, swirl the pot occasionally.
2. After several minutes the mixture will turn from a light amber to medium amber. The lighter the color, the more liquid the caramel will be. The darker the color, the more potent the caramel flavor will be.
3. Add the heavy cream and butter to the mixture as soon as the desired color is reach. While it bubbles, whisk the mixture. Then set aside to cool.
