Pumpkin Bread with Maple Glaze

Fall is filled with harvest vegetables and the best way to eat them is by baking them. Pumpkin bread is my go-to this time of year. Topped with a maple glaze, it’s perfect for breakfast or dessert.IMG_8307


Pumpkin bread:

  • 3 cups all-purpose flour
  • 3 tsp ground cinnamon
  • 1 tsp salt
  • 1 tsp baking soda
  • 4 eggs
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 cups canned pumpkin
  • 1 1/2 cups canola oil
  • 1 1/2 cups semisweet chocolate chips

Maple glaze:

  • 1/2 cup pure maple syrup
  • 2 Tbsp butter
  • 1 Tbsp milk
  • 1 tsp vanilla extract
  • 1 cup powdered sugar

1. Combine the flour, cinnamon, salt and baking soda in a bowl. In a separate bowl, beat the eggs, sugar, pumpkin and oil together. Beat the dry ingredients into the wet until just mixed.

2. Fold in the chocolate chips and pour the batter into two greased loaf pans. Bake at 350° for 60-70 minutes. Set aside to cool.

3. Bring the maple syrup, butter and milk to a boil over medium heat. Stir constantly and remove from heat after 2 minutes.

4. Whisk in the vanilla and gradually add the powdered sugar until smooth. Continue to stir until the mixture thickens and cools. Immediately drizzle on the pumpkin bread.
