Frosted Eggnog Cookies

These cookies simply scream Christmas. The chewy eggnog cookies are complimented by even more eggnog in the frosting. I used Southern Comfort Traditional Eggnog but feel free to substitute it with your favorite. dc9a1c15-9e50-4918-a07c-aae5671c226f

  • 1 cup butter, softened
  • 2 cups sugar
  • 1 cup eggnog
  • 5 and 1/2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. allspice

  • 1/4 cup butter, softened
  • 3 cups confectioners’ sugar
  • 1/3 cup eggnog
  • 1 tsp. allspice

1. In a bowl, cream the butter and sugar until fluffy and then beat in the eggnog. In a separate bowl, combine the flour, baking soda and allspice. Little by little add the dry ingredients to the wet ingredients until fully incorporated.

2. Shape the dough into four rolls, about 10 inches long. Wrap each of them in plastic wrap and chill in the refrigerator overnight.

3. The next day preheat the oven to 375°F and unwrap the dough. Cut it into slices, about 1/4 inch thick and place on baking sheets lined with parchment paper. Bake for about 10 minutes and cool on wire racks.

4. For the icing, beat the butter until fluffy. Mix in the eggnog and allspice. Slowly add the confectioners’ sugar and beat until smooth. Frost the cooled cookies and, if desired, sprinkle additional allspice on the cookies. Enjoy!
